Custom made dessert bowl for Kempinski Grand & Ixir Hotel Bahrain

Kempinski Grand & Ixir Hotel Bahrain opened in September 2011. Hotel offers wide range of culinary experiences, ranging  from Middle Eastern dishes at “Baharat” and gourmet European and Mediterranean flavors at “Saveur” and “Nasmat” to elegant afternoon teas and delicious pastry at “T-Spoon”. In our previous post about this hotel project we talked about Glass Studio’s collaboration with Executive Chef Holger Jackisch to bring to life his vision of  a custom made high tea stand for afternoon high tea service.   Today we share with you another custom dinnerware design, this time a special  dinnerware item for dessert presentation.

Inspired by the trend of molecular gastronomy, Chef Holger Jackisch expressed the idea to transform the way dessert can be served and turn it into a true spectacle that would “wow” the guests and make them feel truly special while tasting his culinary treat.

The creative brief was to create a unique piece of dinnerware for serving ice chocolate pralines. The trick was to serve a dessert on dry ice so as to a create smoke-like fog cloud  that would hover from the dessert dish over the surface of the table  and create a mysterious effect for dessert presentation.

The dessert plate would need to be made of a sturdy material to withstand the temperature fluctuations but still be elegant and stylish. The dessert dish would also need to have a lid to hold the smoke of the dry ice before it starts floating on the table.

Glass Studio designers saw this challenge as a perfect opportunity for expressing their creativity in dinnerware design. The concept centered on designing a dessert bowl with glass cloche for serving the dessert.

 

Designers decided to use a glass bowl as a vessel holding the ice (to replace a traditional dessert plate). Special custom-made metal plate with holes is then placed over the bowl of ice for drainage, and above it comes a dessert dish with pralines. The structure is topped with glass cloche that holds the smoke from “slipping” once the water is poured over dry ice to create the fog effect.

Designers chose to keep the decorative aspects of the dessert presentation in the frames of  minimal elegance. The dessert bowl was created in clear blue glass without patterns, so as to allow the guests to see the “magic” happening under the cloche and fully enjoy the effect.

The blue color of the glass intensifies the mysteriousness of the dessert presentation. The round shape of the dessert bowl mimics the shape of the chocolate pralines served, while the silver tip of the glass cloche adds the touch of luxury.

This custom made dinnerware project demonstrates that Glass Studio designers have all the creative skills needed and understanding of culinary trends to make extraordinary food presentation ideas chefs envision a reality.
